Why Are Single Origin Coffees Important?

Single-origin coffee can be traced to a region, cooperative, or individual farm and producer. Each single-origin coffee has unique flavor characteristics that are affected by altitude, growing practices, processing, and sorting. Coffee is also seasonal and tastes best just after harvest. We take a rather simple approach to roasting. Basically, we roast to highlight the flavors that exist in coffee and never to add new flavors. If a coffee doesn’t have nuttiness in the profile, then we don’t turn the world upside down to achieve nutty flavors. Many roasters rely on blending different coffees to achieve flavors instead of sourcing high quality single-origin coffees that are packed with flavor.
