However, her passion for Chinese culture and history didn’t resonate with her long-term career aspirations. Eventually, Melanie decided to leverage her lifelong love of baking professionally.

The moment Melanie entered the kitchen and touched dough for the first time in a professional capacity, she knew she had discovered her life’s purpose. From there, she began at the bottom, doing what many might consider the grunt work of the kitchen, but she loved every moment of it. Her dedication and hard work eventually paid off, leading her to hone her craft in various kitchens in France, Morocco, and the United States. 

A Flourishing Career in the Big Apple 

Melanie is currently based in New York and holds the prestigious title of Chef Boulanger/Head Baker for the Dinex Group, a collection of restaurants under the renowned Chef Daniel Boulud’s watchful eye. She brings more than a decade of experience to the table, thriving in the demanding environment of a professional kitchen. 

The Infinite Art of Bread 

One of the many things that fascinates Melanie about baking is the infinite variety that bread provides. Bread, she notes, is a universal constant, present in nearly all cultures. Despite being made from basic ingredients—flour, water, salt—bread is incredibly versatile. The recipe, mixing method, and fermentation process can dramatically change its character, offering an infinite realm of possibilities. This versatility makes bread a canvas for creativity, allowing bakers like Melanie to innovate and create something unique and special.
