Culinary Maestro Niran Di Blasio Takes the Helm at Le Gratin, NYC’s Premier Dining Spot

New York City is considered the global culinary capital of the world, with 73 Michelin-starred restaurants. With its diverse range of cuisines and dining experiences spread across all five boroughs, it’s no wonder that working as a chef in one of the Big Apple’s Michelin-starred establishments is a pinnacle achievement for most in the culinary world.

Chef Niran Di Blasio enters the New York City dining scene, having accepted the role of Chef de Cuisine at Le Gratin in downtown Manhattan with Michelin-starred Chef Daniel Boulud, who was named “World’s Best Restaurateur” in 2021 by Food Service and Hospitality. 

Le Gratin belongs to The Dinex Group LLC, which has 12 restaurants in NYC, including a Commissary Kitchen. It is renowned for its elegance and culinary innovation.

Di Blasio started his culinary career in Italy, in his hometown Milan, where he gained experience working in different restaurants. He later expanded his horizons, moving through Lyon, London, and Paris, continually refining his expertise. Under the mentorship of celebrated chefs like Carlo Cracco and Alain Ducasse, he faced diverse challenges and absorbed valuable insights that shaped his cooking approach. His time with Michelin-starred Chefs, such as Ristorante Cracco in Milan and Alain Ducasse’s Cucina Mutualité in Paris, provided him with the quality and distinction necessary for the level of his current position.

In 2021, Niran had the opportunity to work alongside Carlo Cracco, one of Italy’s most renowned chefs, when he was invited to help launch Cracco Portofino, a refined restaurant featured in the Michelin guide. Built on the foundation of Ligurian culinary traditions and showcasing fresh, local seafood, Cracco Portofino was Carlo Cracco’s first meatless dining venture. Di Blasio was primarily responsible for designing the menu, testing the dishes, training the new staff, and coordinating the service. The restaurant sought to maintain the same level of excellence as his Michelin-starred Ristorante Cracco in Milan while creating a unique dining experience centered around local products. 

Following his time at Cracco Portofino, Niran relocated to Paris to join Alain Ducasse’s Cucina Mutualité. He initially served as a Sous Chef under Alberto Marcolongo but was quickly promoted to Head Chef at the Italian restaurant of Alain Ducasse, the most Michelin-starred Chef in the world.

Di Blasio’s ability to blend the techniques of French and Italian cooking sets him apart in an industry where precision, creativity, and innovation are key. The roots of his cooking lie deeply in these two traditions, both renowned for their influence on global gastronomy. French cuisine emphasizes meticulous technique and luxurious textures, while Italian cuisine celebrates simplicity, bold flavors, and the purity of ingredients. Chef Niran excels in uniting these diverse culinary philosophies into a harmonious style of his own, merging the elegance of French cuisine with the heartiness and passion of Italian fare.

After making a name for himself and becoming well-known in the culinary industry, in 2023, Niran was offered a job as Executive Chef of the luxurious Kahari Resort in the Bahamas. This new position expanded his culinary skills even more, giving him the chance to explore tropical ingredients and implement eco-friendly cooking methods.

By drawing on global experiences, Chef Niran Di Blasio is able to create unique, fusion-style dishes or authentic reproductions of international favorites, which appeal to the adventurous tastes of high-end diners. It also allows him to learn new methods of preparation and presentation that he can integrate into his cuisine, leading to greater innovation.

Now, with his extensive international experience, Niran takes on a new challenge in New York City, a place that is not just a culinary hub but also a melting pot of cultures and cuisines from all over the world.
